I usually gravitate towards sandwiches when I’m making lunch at home. They’re quick, satisfying, and relatively inexpensive. This chicken salad sandwich is way more exciting than your standard meat and cheese varieties. It has fresh, healthy ingredients and is so simple to make. This recipe replaces the mayonnaise with Greek yogurt. Greek yogurt has so many uses and is a healthier alternative to ingredients like mayo and sour cream. I wanted my recipe to have as few ingredients as possible, but you could also add things like celery and carrots. The chicken comes from ripping up packaged sandwich meat with your hands. It doesn’t get easier than that, but again you could cook chicken breasts to put in this instead.
Ingredients:
1 package of Applegate chicken breast lunch meat (or other lunch meat)
1/2 cup plain Greek yogurt
1/2 cup diced onion
1 red apple, diced
1 cup of grapes, halved
Garlic powder and black pepper to taste
Any type of rolls, bread, or tortillas
Makes about 4 servings
Directions:
- Get a large bowl to mix everything together
- Tear up lunch meat into small pieces
- Dice onions and apple
- Cut grapes in half
- Add Greek yogurt, garlic powder, and black pepper
- Mix thoroughly
- Scoop onto bread, then enjoy!
