I cook most of my meals at home and the recipes I use almost always have three key attributes: they’re healthy-ish, don’t have too many ingredients or steps, and therefore are inexpensive to make. I live alone with my cat but I always make something that has at least four or five servings so I have lots of leftovers. This saves money AND time! Yep, I’ll eat the same thing for dinner all week. Poor me. All of these recipes are so delicious you probably won’t mind either.
I love my crockpot – I use it all year. I know a lot of people have Instant Pots now but with a crockpot (slow cooker) all you have to do is throw everything in and wait. It’s one step then you have dinner for a week. I also love casseroles for that same reason or because I’m an 80 year old woman trapped in the body of a 25-year-old. Anyways, here’s what you came for:

4 Ingredient Chicken Rice Casserole
This is my favorite recipe so I’ll list it here first. It’s so easy to make and only uses one dish. It’s basically green bean casserole but with chicken instead. The recipe doesn’t call for vegetables but I always add either green beans or broccoli.
Baked Zucchini Penne Pasta
I love this recipe because you throw everything into a casserole dish and that’s it. You don’t have to cook the pasta beforehand. This recipe is delicious as is but the customization options are endless as long as you stick to the pasta sauce to water ratio. Rao’s is my absolute favorite pasta sauce.
Best Chicken Enchilada Casserole
Another one dish recipe – everything goes in raw. It’s a lighter take on traditional enchiladas, but just as satisfying.
Enchilada Stuffed Sweet Potatoes
I like this recipe because it’s vegetarian but still filling and full of good nutrients. Make a big batch and put some directly into the freezer for later.
5-Ingredient White Chicken Chili
This is like a cross between chili and tortilla soup. I like to eat soup all year round but this feels like a more spring/summer appropriate soup especially if you add some fresh avocado on top.
Slow Cooker Chicken Pot Pie Soup
I skip the celery and do just a frozen vegetable mix to make this even easier. This is really just chicken soup plus 1 cup of half and half.
5 Minute Buffalo Chicken Wraps
Chicken + hot sauce + butter + tortilla + lettuce = 🔥
Easy Broccoli Cheese Soup – 5 Ingredients
Ok, this recipe might not be the healthiest but I highly recommend it if you’re in need of comfort food without too much effort. I just really love broccoli cheddar soup. 😁
